A Sparkling Brunch Experience
Brut + Brunch is a curated, three-course sparkling brunch experience, offered in a limited-run pop-up format at Evolve Sparkling House.
Designed as a wine-forward experience, each course is thoughtfully paired with Evolve’s sparkling wines, highlighting balance, texture, and the wines’ natural versatility.
What’s Included:
• Three-course brunch created by Chef Bruno Terroso
of OROLO Restaurant + Cocktail Bar
(Allergies & restrictions accommodated with min 48 hours advance notice)
• Three – 3oz Sparkling Wines

Indulge in exceptional Canadian Whisky!
Join OROLO Restaurant + Cocktail Bar and co-host Paul Pyne from Pernod Ricard for an exclusive long table dinner in Cellar 2. This unique pairing event promises a delightful culinary experience you won’t want to miss!
Starting with a welcome cocktail reception @ 6:00 p.m.
Then a 5-course whisky-paired dinner 6:30 – 9:00 p.m.
